When it comes to tutoring 1-on-1, I take the same approach I take in my classroom - I establish a relationship with the student so that I know how to best instruct them. Learning requires trust, and if my students don't believe I have their best interests at heart they're less likely to learn from me. I also like to understand students' misconceptions before I launch into instruction, so there is a lot of probing around questions students have and diagnosing where they're getting mixed up. Lastly, I like to know student's goals academically, whether that means within a single lesson, concept, or on a broader scale. It helps set the context for what needs to be done in order to get them there.
